Recipes: Quinoa salad



This quinoa (pronounced keen-wah) salad is one of my favorite recipes. Get creative and add your own variations!

Ingredients:
1/4 cup organic white quinoa
1 can organic chickpeas
1 1/2 cucumbers
2 roma tomatoes or 1 large tomato
1 avocado
10-15 kalamata olives
3-4 teaspoons feta cheese

Directions: Cook quinoa according to directions. While quinoa is cooking, dice veggies and olives according to preference. Drain and rinse chickpeas. Add all ingredients together and stir!
