Recipes: Grilled zucchini and feta rolls




It's grillin' season, and you can grill way more than just meat!
Case in point: Zucchini and feta rollups. Delish!

Ingredients:
zucchini, sliced in thin strips, grilled
1/8 c feta cheese
2 tbsp kalamata olives
1/8 c greek yogurt

Directions: Cut the zucchini in strips long-ways. You want them about 1/4 inch thick. Grill the zucchini strips - it should only take a few minutes on each side. Mix the feta, olives and yogurt. When the zucchini is done, spread the mixture thinly on one side and roll!
