Recipes: Grilled Zucchini Boats

Zucchini is a staple in my kitchen. Whether you're trying to cut down on sugar, fats, or just calories, it's the perfect healthy living food. It can take the place of almost anything! In this case, buns!

2 medium or large zucchini
 1/4 cup chopped black olives
1/2 cup crumbled bacon (or more. Try turkey bacon.)
 1/2 onion, minced
1 roma tomato, chopped
1 jalapeno pepper, minced (from my garden!)
 1/4 cheese (try Cheddar or pizza/mexican blend)
Dried basil, salt and pepper to taste

To make, first boil the zucchini for 5 minutes. Don't skip this step, and don't overboil! I was tempted to skip it, as I grill zucchini with no prep all the time, but a quick pre-boil kept it soft and moist and allowed the other ingredients to toast nicely. While the zucchini boils, cook your bacon. 

Chop up the veggies and put in a bowl with the seasoning. Crumble the bacon when done and add it to the mixture. Cut the zucchini down the middle, length-ways, and using a spoon gently scoop out the insides by raking the spoon length-ways. Add the zucchini insides to the mixture. 

Then, spoon the mixture onto your boats. Sprinkle cheese on top. Place boats on a piece of tinfoil and form into a little bowl. I left mine open at the top, which allowed the top to get a bit crunchy. Grill on low heat for about 10 minutes. 

Next time, I may try adding cooked chicken or shrimp to the mixture, since it was a little lacking in protein. However, I was surprised as how filling this meal was!
