Recipes: Zucchini fritters

Zucchini for breakfast? Yes! Zucchini has so many great uses. Zucchini bread, zucchini noddles, zucchini in brownies... and it all tastes great! But these zucchini fritters hit it out of the park.

2 medium zucchini
2 green onions
1/4 cup flour (I use almond flour)
1/4 cup grated Parmesan cheese (or similar)
2 eggs
Salt and pepper to taste

Chop the zucchini and stick them in a food processor. (If you don't have a food processor, you can grate them.) When you put them in the food processor, be sure to pulse it. If you just let it run, it will wind up really soupy. 

Then mix in a bowl with the rest of the ingredients. Put a little oil (I use coconut oil) in the pan. Spoon the mixture in and cook just like pancakes, just a couple minutes on each side. 

I also like to put them on paper towels when they're done and blot the extra oil. 

Hidden veggies for breakfast, and healthier than pancakes! They're great with fruit and a little honey drizzled on them.
