Recipes: Grilled Corn Salsa

I'm a huge fan of grilled anything, and corn is no exception!

My favorite way to grill corn is with the husk on. I grill on low heat, flipping halfway. The nice thing about the husk is it allows the corn to get that great smokey taste, but keeps it from getting burned.

4 ears of corn, grilled
2 cucumber, diced
1 avocado, diced
3 roasted red peppers, diced
2 green onions, diced
1/2 cup feta cheese crumbles
1 tsp lime juice
1 tsp minced garlic
1 tsp cumin
salt and pepper to taste

Directions: Grill the corn. 

Let it cool, then peel the husk off, and cut the corn off the cob. 

Then chop up your veggies and combine all ingredients.

This is great as a salad topper or a side!
